A few of my favorite recipes

I love sharing what recipes I like and also love knowing what others are enjoying as they are on their quest for health and wellness.

Chicken Chili in the Crockpot

1 pound Perdue Fit & Easy Ground Chicken Breast
1 vidalia onion
28 oz. can diced tomatoes (your choice)
15.5 oz. can low sodium kidney or black beans (rinsed)
1 jar Newman's Own Black Bean and Corn Salsa (or your favorite)
4.5 oz. Green Chiles, chopped

Saute the onion in a sauce pan sprayed with Pam, once translucent, throw into the crockpot.  Next brown the chicken until no longer pink, throw into the crockpot.  Add remaining and keep stirring occasionally.  Its ready when you are.

I like to use the following accompaniments:  a dollop of nonfat greek yogurt (which tastes very close to sour cream).  Shredded reduced fat Mexican cheese (Sargento makes a great one).  Tortilla chips, try blue corn for added variety.

Mock Calzone

High Fiber pita pocket
1/4 cup Polly-O nonfat ricotta
1/4 cup Sargento Shredded Reduced Fat Mozzarella cheese

Cut pita in half, spoon in ricotta and cheese, microwave until cheese melts.  I know its a stretch but that meal has gotten me through alot of weeks where weigh in was successful.  Plus its clean eating if you use Ezekiel pitas!

Morning Veggie Omelette
1 Eggland's Best Egg
1/2 cup liquid egg whites
1 scallion chopped
1/2 cup fresh mushrooms
handfull of spinach leaves
Reduced Fat Feta Cheese
1 teaspoon EVOO (Extra Virgin Olive Oil)

Cook scallions in a pan sprayed with PAM, add mushrooms and then spinach until it wilts.  Season with pepper and a touch of sea salt.  Add tsp. of EVOO.  Scramble egg and liquid egg whites and add to pan. Let it set a bit, add cheese.  Fold over and serve with salsa and Ezekiel toast.

Afternoon snack

1 gala apple
1 reduced fat string cheese
walnuts or almonds
